Here's a quick fix snack if you are home alone and too lazy to make your regular meal and want something healthy and tasty

And here I am struggling with a new diet plan , and am making every conscious effort to follow it.

So i ve used olive oil instead of butter and small amount of processed cheese instead our creamy morzarella. However if you plan to make it for your little one, load it with all the extra goddness of butter and cheese aloong with the veggies....

  1. Drizzle the olive oil on the bread and sprinkle some chopped garlic and toast in the microwave till brown and crisp.
  2. Mix the chopped onion , tomato and capsicum with the remaining olive oil , salt , mixed herbs , pepper, and remaining garlic and spread it over the toasted bread
  3. Now top it with some grated cheese and grill it in the oven till the cheese melts.
  4. Serve with ketchup.

Hi! I am Sonali, mom to a fast growing teenager and a homemaker.I love to cook, read and travel ( and in that order). I believe that travel keeps the cook ever so innovative. Each time I travel, I scourge the market places and eateries for some new ingredient or recipies. I believe that every type of cuisine has its own story to relate……One that’s fascinating.Being born and brought up in Mumbai which is often called “a melting pot of culinary delights” helped me explore and experiment with a wide range of cuisines. So come share with me the tang of lime, the bite of chilli, the fresh herbs, the crunch of raw veggies and experience the wide spectrum of textures and sharp flavours of different cusines.
