  1. Sieve the flour and the baking powder. Beat the eggs till fluffy.
  2. Cream the sugar and the oil. Add the eggs and beat, now add the orange juice and half of the Malibu and beat. Slowly add the flour a little at a time and fold in the mixture (do not beat) till all the flour is incorporated. Now add the diced pineappl
  3. Dust the cake tin and pour in the cake batter. Bake at 180 degrees for 35 to 40 mins.
  4. The cake will be moist because of the pineapple. Cool and sprinkle the remaining Malibu over it. You can decorate it with fresh cream or Pineapple and orange wedges.
