Was tired of eating tandoor starters. Wanted to try something a little spicy but also with a lot of zing. So here is chicken with an Italian twist. Turned out really well….. I have used port wine. The regular red wine could be used but you might need to add a little sugar to it. So Hic Hic Hurray!!!!!!!
- Marinate the Chicken in ginger garlic paste and the red wine. Add the chilli flakes, mixed herbs and salt. Leave the marinade for 1/2 an hour.
- Heat the Oil in a pan. Add the marinated Chicken and cook till the wine dries up. Garnish with Spring Onions. Serve with Olive Bread.
