These are a very different take on otherwise traditional kebabs, that are cooked especially here in India! Apart from the handful of kebabs, which are made with cream and some subtle ingredients, most our kebabs are hot and spicy , and mostly made in a Tandoor , a traditional Clay Oven. These Mediterranean Kebabs, are zesty ,tangy and mildly spiced but loaded with flavours!

  1. Grind the ginger garlic and spring onions to a fine paste (can add a small green chilly for some spice) Rub the paste to the chicken. Add olive oil, orange juice , zeast, balsamic vinegar, salt, honey and pepper and keep the chicken to marinate for atle
  2. String the chicken alternately with the cherry tomatoes , onions and capsicum on the wodden skewers and grill it on a medium hot pan. Baste the chicken with the remaining marinade while grilling. Garnish with coriander , and olives

Hi! I am Sonali, mom to a fast growing teenager and a homemaker.I love to cook, read and travel ( and in that order). I believe that travel keeps the cook ever so innovative. Each time I travel, I scourge the market places and eateries for some new ingredient or recipies. I believe that every type of cuisine has its own story to relate……One that’s fascinating.Being born and brought up in Mumbai which is often called “a melting pot of culinary delights” helped me explore and experiment with a wide range of cuisines. So come share with me the tang of lime, the bite of chilli, the fresh herbs, the crunch of raw veggies and experience the wide spectrum of textures and sharp flavours of different cusines.
