I feel like a war soldier after a hard day, and many a times the following morning as well, especially when it comes to dragging myself to a day with a time crunched routine and toddlers smile happens to be the only motivation! I m sure to receive as much empaties from the many toddler moms reading this! With a lot written on the significance of a filling nutritious breakfast every morning,the busy routine that surrounds me triumps and I skip  the most important meal of the day. Just to keep my energy levels at par , this is my occassional cheat breakfast that I munch on, to give me the punch to kick start my day. Traditionally Aussie NZ , these cookies are surprisingly easy and eggless too, with a shelf life of more than 10-12 days, when stored in airtight jar.Originally they were made for Australian and New Zealand war soldiers by their mothers and wives, when they were away for longer periods of time. The cookies had an extended shelf life as compared to the other versions and were nutritious served as an instant source of energy. This story made me go back to the “Maa ke Laddoo” story( Indian moms make pot full of ladoos for their children when they are away) …Indian or International..Mothers indeed are the same…warm and loving.

Directions

  1. In a bowl,mix together sifted flour,coconut,oats and sugar and set aside. Preheat oven at 150 deg.C for atleast 10 mins.
  2. Heat pan and add honey and butter and stir till mixed. Once the mixture is warm,put off heat.Now add soda bicarb and mix. Add this mixture to the mixed dry ingredients and fold till combined.
  3. Scoop small portions of the mixture on greased baking tray lined with parchment paper. Top with candied cherry. Bake in preheated oven for 20=30 mins, till golden brown. Cool on a rack and store in airtight container.
