Solkadhi is one such drink thats always had with fish dishes and fish curries, to balance out the spices used and aid digestion.
- Mash the soaked kokum petals and extract the pulp. Grind the coconut with the garlic and chilli and 2 tbsp warm water. Strain the ground mixture through mesh and extract the coconut milk. Put back the remainder coconut add 1/2 cup water and grind fur
- Mix the kokum extract with the coconut milk. Strain the mixture. Add salt and sugar and mix. At this stage, you can add additional coconut cream or milk for making it nice and creamy. I used canned coconut milk. Garnish with finely chopped coriander
