Cheese Crusted Chicken /Cheesy Grilled Chicken

The much awaited winters are here, and so is the time to relish piping hot soups, cakes , cookies and lots of food! I particularly love this season for the variety of fresh seasonal fruits and vegetables it offers, besides getting a chance to make the lovely traditional goodies,that can be eaten only during winters. Summers are extreme here, so some foods that impart heat,are best avoided in summers. One such winter evening, me n my toddler were relishing our chicken soup, and the cold whether made me lazy and too sluggish to get up and cook some dinner. I even anticipated boiling some instant noodles but ran out of supplies….so decided to do some quick grilling and coupled it with some salsa, made the day before! This cheesy grilled chicken tastes best with a tangy bell pepper salsa. Ref our recipe for Bell Pepper Salsa

  1. Mix together the grated cheeses with the herbs and bread crumbs and set aside.
  2. In another bowl, marinate the chicken pieces with salt, pepper and set aside for 15 mins.
  3. Heat the grill or the grilling pan and drizzle some oil. Lightly dust the chicken piece in flour, do not press the flour, just let the flour just stick to the chicken. Now dip it into the egg white and then coat the chicken piece into the cheese mixt
  4. Place the chicken on hot grill or non stick grill pan and cook on low heat till chicken is cooked and browned on both sides.
  5. Serve immediately with bell pepper salsa
