This is a very typical native form that the versatile Bhindi takes while on coastal belt of Maharashtra,particularly Mumbai. Love this Bhindi Fry with a “Satvik” meal of hot phulkas ,dal and rice. The subtle sweetness of coconut works well with the bhindi,blended with local Goda Masala!

Directions

  1. Heat oil in a pan and add cumin. Add the bhindi and fry for 1 min. Add salt and amchur powder and fry till the bhindi is dry and browned.
  2. Now add the masalas:turmeric,red chilli,goda/garam masala and sugar. Fry for 1 min. Now add scraped coconut and fry till the coconut is dry and sticks to the okra. Add coriander leaves. Serve hot with rotis.
