  1. Wash the beetroots throughly and cut into 1 inch cubes. Finely chop the garlic cloves.
  2. In a bowl, mix the beetroot cubes, salt, chilli flakes, finely chopped garlic, chopped parsley, chopped thyme and oilve oil.
  3. Pre heat the airfryer or the oven. Wrap the herbed beetroot cubes in an aluminium foil and bake at 200 degrees for 15 to 20 mins.
  4. Open the aluminium foil and let the beets cool down. Serve on a bed of lettuce and drizzle a little olive oil and balsamic vinegar.
