Valentines Specials:Europe On Your Plate :Stuffed Rigatoni,Pumpkin Ravioli in Wine and Saffron Cream Sauce,Vegetable salad,Irish Coffee

This Valentine, I decided to keep a theme to my dinner table. After Indian Cuisine, the European Food has great taste and variety to fill up an entire table and good rustic recipes too.

So here are the recipes that cover Entree,Mains ,Cocktails and Desserts.

 

Rigatoni Pasta

1 Cup/Approx 10-15 tubes

For Stuffing:

 

Spinach Leaves

1 Cup,

Paneer

½ Cup

Mixed Herbs

1 tsp

Salt

½ tsp /As per taste

For Pasta Sauce:

 

Tomato

1 Medium,chopped

Onion

1 Small,finely chopped

Chilli Flakes

2 tsp

Garlic

3 Cloves,minced

Olive Oil

2 tsp

Salt

To taste

Processed Cheese

1 -2 Cubes, grated

 

  1. Boil water and add 1 tbsp salt.Add the rigatoni tubes and cook till al Dante.
  2. Drain and refresh by holding under cold water. Add a few drops of oil,toss and set aside.
  3. Add the washed spinach leaves to a pot of hot water . Drain and chop them finely.
  4. Mix the spinach to the bowl of grated paneer or cottage cheese. Add salt,herbs and mix.
  5. Stuff individual rigatoni tubes with the stuffing ,careful not to tear them.
  6. Heat oil in a pan and fry minced garlic for few seconds. Add onion and fry till translucent.
  7. Add tomatoes and chilliflakes and salt and mix.
  8. Cook on medium flame on open pan for 2 mins till the tomatoes are slightly soft but not mushy. Add water if too dry. Switch off the heat and set aside.
  9. In a glass heatproof bowl, spoon and spread a tbsp. of the sauce. Neatly arrange the stuffed rigatoni over the sauce.
  10. Layer a tbsp. of sauce over the rigatoni ,followed by some more rigatoni.
  11. Finally ,finish with grated cheese on top.
  12. Bake in a preheated oven 200 deg C for 10 mins, till cheese melts. Or just microwave on a high for few mins till the cheese bubbles.

 

Recipe: Pumpkin Walnut Ravioli in White Wine Saffron Cream Sauce.

 

For Ravioli Pasta

 

All purpose flour

1 Cup

Salt

1 tsp

Water

¼ Cup approx

Oil

1 tsp

For the Stuffing:

 

Pumpkin

1 Cup diced ( approx. 200 gms)

Walnuts

5-8,chopped

Chilli flakes

1 tsp

Oil

½ tsp

Salt

¼ tsp /to taste

Chilli Flakes

2 tsp

For Sauce:

 

Onion

1 Small,Finely Chopped

Olive Oil

1 tbsp

Garlic

3 Cloves Minced

White Wine

2-3 tbsp

Cheese

1 cube, approx. ¼ cup.

Cream

½ Cup

Milk

¼ Cup

Saffron

1 tsp soaked in ¼ Cup warm water.

Sugar

½ tsp

Salt

¼  tsp / as per taste

  1. For the pasta dough, knead a  stiff dough mixing flour, salt and oil. Add water as needed.
  2. Cover for 10 mins.
  3. Heat oil in a pan and add diced pumpkin, salt and chilli flakes. Cook till mushy. Mash a bit and add chopped walnuts. Cool.
  4. Make two portions of the dough and roll them into a roti.
  5. Cut the dough using  round cookie cutters and set aside.
  6. Place small portions of stuffing on each roundel and cover with the other . Pinch and press the sides to seal.
  7. Bring water to a rumbling boil and slide the pastas into the pot.
  8. Cook on a medium flame for 1-3 mins, the pasta floats on top when cooked.
  9. Drain and set aside.
  10. For making the sauce, heat oil and sauté garlic and onions tioo translucent.
  11. Add white wine and fry on low flame, till the wine reduces a little.
  12. Add the cream and milk and simmer for a min.
  13. Add grated cheese and let melt. Add salt and sugar.
  14. Finally add the soaked saffron and swirl.
  15. Slip the ravioli into the sauce and delicately fold.
  16. Transfer in a serving bowl and garnish with fresh mint leaves.

 

 

Recipe: Irish Coffee with Coffee Cream

Expresso Shots

1 Cup (Alternately make a decoction by boiling 1 cup water and adding 1tbsp Coffee, (instant or ground), sugar to taste and filter the coffee in individual glasses)

Irish Crème Liquer

¼ Cup (optional) or syrup if making non alcoholic

Whipped Cream/Cool whip/Dairy free whipped topping

1 Cup

Sugar

2-3 tsp

Instant Coffee

1 tsp

 

  1. Whip the cream with coffee and sugar till stiff.
  2. Transfer in a bowl and deep freeze for atleast 1-2 hrs to set.
  3. Pour the expresso of coffee in individual glasses.
  4. Spike them with Irish Crème Liquor,stir.
  5. Scoop out the frozen coffee cream and top it over the hot coffee.
  6. Serve immediately.

 

Recipe:Mixed Vegetable salad With Light Yogurt Dressing

Lettuce Leaves

1 Cup torn

Onion

1 Medium Sliced

Bell Peppers

1 Cup Julienned

Red Cabbage

½ Cup Shredded

Tomato

1 Medium Julienned

Bread Toast bits

2 sliced bread cut into squares and toasted.

For dressing:

 

Yogurt

1 Cup

Mayonnaise

1 tbsp

Sugar

1 tsp

Pepper Powder

½ tsp

Mixed Dried Herbs

1 tsp

 

  1. Mix together  the vegetables in a bowl.
  2. Whisk all the ingredients for dressing and pour over vegetables
  3. Toss and top with bread bits.

Recipe: Garlic Bread Toast

Slice the bread loaf,apply a mixture of 1 tbsp minced garlic with 3-4 tbsp butter and toast them over grill or hot tawa.
